Pesto di pistacchio
If you are not lucky enough to find it ready on the supermarket shelves you can prepare it at home like me.
Here is my recipe for making pistachio pesto at home.
Ingredients
- 150 grams of pistachios ( for pesto)
- Extra virgin olive oil
- Salt and pepper
- Parmesan cheese q.b.
- 2 garlic
- Pistachio pesto ( for tagliatelle pistachios )
- 1 shallot
- 50 gr of diced ham
- Cooking Cream
Instructions
Pesto procedure:
Shell the pistachios one by one.
Chop them in the mixer or with the meat mallet in a dry and clean cloth.
Put the mixture in a bowl and mix with a little olive oil, salt, pepper and Parmesan.
Sauce procedure:
In a pan, fry the chopped shallots with the oil and the ham cut into small pieces. Add the pistachio pesto and then the cream.
Add a little hot water and cook for 5 minutes. If you prefer, you can blend the sauce so that it is homogeneous and creamy.
