Pesto alla siciliana
Ingredients
- 150 gr Basil
- 50 gr Mint
- 50 gr grated pecorino / parmiggiano cheese
- 3 garlic
- 20 cherry tomatoes
- 50 gr dry tomatoes
- 50 gr almonds
- 100 gr ricotta cheese
- 30 gr pine nuts
- salt
- pepper
- olive oil
Instructions
Cook the pasta al dente and drain.
Put all the other ingredients in the mixer until you get a thick cream.
Season the pasta with the pesto obtained by sautéing it in the pan for a few minutes. Decorate with basil.
