In these hot summer days, I wanted something fresh and quick to prepare.
So looking at my mint plants I got a little inspiration …

Ingredients :
500 gr of chopped chicken not too small
Mint leaflets
1 lemon
Olive oil
Balsamic vinegar
Yoghurt sauce and herbs to dress salads
Sliced cucumber
salt

 

Method :
In a container left to marinate in the fridge for at least an hour, the pieces of chicken with olive oil, lemon juice, salt, mint leaves, balsamic vinegar and a tablespoon of yogurt sauce for salad . Meanwhile, slice the cucumber and prepare the serving dish.
Cook the chicken nuggets in a non-stick pan, without oil, on a low heat for 10 minutes with the lid.
Then raise the heat, remove the lid and let the chicken sauce shrink for a few minutes.
The dish is ready.
Serve warm with a side dish of cucumbers and garnish with yogurt sauce and herbs. Enjoy your meal!
