Ingredients:
9 clean artichokes
50 g of breadcrumbs
50 gr. Of grated cheese
2 cloves of garlic cut into small pieces
Salt and pepper
Chopped mint.
Method:
Put the bread, cheese, garlic, salt, pepper and mint cut into small pieces in a bowl. If you don't have mint, chopped parsley is also fine; mix everything, then widen the artichokes a little and put in a drizzle of extra virgin olive oil salt, pepper and a little of the mixture.
Fill them all.
Aside, beat 2 eggs with salt and pepper.
Take an artichoke in your hands, and carefully put 2 tablespoons of egg on top which you will immediately turn in a pan with a little hot oil for 5 seconds and remove it from the heat, it just needs to form a cap.
When the artichokes are all ready put them in a low pan where you previously put a little water, a teaspoon of vegetable nut, a bay leaf, a clove of garlic cut into small pieces, a teaspoon of grated cheese, salt, pepper and a half glass of oil.
In the middle of the artichokes put the potatoes cut into pieces, a little parsley.
Cook about three quarters of an hour on medium heat.
Before serving, let them rest for a while, they will be tastier.
