Tiramisu
Ingredients
- 500 gr of mascarpone
- 150 gr sugar
- 30 ml Marsala
- 30 gr bitter cocoa powder
- 300 gr ladyfingers biscuits - 300 gr savoiardi biscuits
- 6 eggs
- 3 cups espresso coffee

Ingredients:
500 g of mascarpone
300 g of ladyfingers biscuits
150 g of sugar
3 cups of espresso coffee
30 ml marsala
4 yolks
2 egg whites
bitter cocoa powder to taste
Method:
To prepare tiramisu, start with the mascarpone cream. Divide the yolks from the whites and, in a bowl, whip them with firm snow.
Put the yolks and sugar in another bowl, work them for a long time with a whisk until a light and frothy mixture is obtained.
Gently add mascarpone to this mixture.
Add the egg whites until stiff.
Cover the bottom of a rectangular serving dish with high edges with a layer of ladyfingers and brush them carefully with coffee and marsala; alternatively, gently pass them in the coffee without soaking them too much before placing them on the plate.
Cover the layer of ladyfingers with a layer of mascarpone cream and sprinkle it with a little bitter cocoa powder. Repeat the same action until all the ingredients are used up, ending with a layer of mascarpone.
Sprinkle the tiramisu with the bitter cocoa and put the cake in the refrigerator for about three hours.
