Bocconcini di melanzana . Finger food sfiziosi.
Ingredients
- 2 aubergines
- olive oil
- breadcrumbs
- Grated Parmesan cheese
- 10 tomatoes
- 250 gr mozzarella
- 100 gr mortadella
- 6 fresh basil leaves
- 6 mint leave
- salt
- pepper
Instructions
Preheat oven to 180 degrees.
Cut the aubergines into round slices and grill them on the griddle to soften them.
Let them cool, brush with olive oil and pass them in breadcrumbs and grated Parmesan.
Cut the tomatoes and mozzarella into slices. Season with salt and pepper.
So make the morsels with a slice of breaded eggplant, a slice of tomato, one of mozzarella and a piece of mortadella.
Bake at 180 degrees for 10 minutes. Remove the aubergines from the oven and decorate with basil and mint leaves.
Arrange the morsels obtained on a serving plate and serve.
