Ingredients:
1kg of 00 flour,
250 gr of sugar
250 gr of soft lard
4 eggs - 1 egg white (to make the glaze)
1 packet vanilla yeast
2 vanillin envelopes
20 g of ammonia for sweets dissolved in half a cup of milk at room temperature
the grated peel of a lemon
Method:
Mix everything with a little milk. It must be a nice soft and smooth dough, wrap it in plastic wrap and leave it in the cool for a couple of hours.
For the stuffing:
Cut 500 g of dried figs into small pieces, put them in a pan on the fire with half a cup of hot water and 2 tablespoons of espresso.
Leave to cook for a few minutes, pour into a bowl, as soon as they are cold add 200 g of finely chopped almonds, 100 g of chopped dark chocolate, 100 g of colored zuccata into small pieces, 4 tablespoons of orange marmalade, the peel of an orange and one of grated lemon, a teaspoon of cinnamon, a couple of spoons of amaretto liqueur. Mix everything, let it rest for a while, pick up the dough, take a piece and crush it with a rolling pin, I took the shape, but it can also be done with a large glass, put a spoonful of filling in the center, close well.
They can be made in different carved shapes, put in a pan lined with 2 sheets of paper (so they are the same color above and below) and bake for about 15 minutes at 200 degrees. They must not be dark. When all are ready pass over the glaze made with 1 egg white blended with at least 130 g of icing sugar, if it is a little liquid add a little sugar, then add a few drops of lemon (it must be soft and smooth) I pass it on with a brush, and I put colorini, this time I added a few drops of green and pink, but whites are also beautiful.
