This is my personal recipe for Mediterranean stuffed squid with tomato and ricotta.
My calamari are very tasty and remain soft and fragrant.
The filling is absolutely delicious and with the sauce you can also season the pasta.

Mediterranean-style stuffed squid
Ingredients:
6 squid
16 cherry tomatoes cut in half
3 spoons of ricotta
Chopped tomato sauce
Basil
1 egg
Breadcrumbs soaked and squeezed
Garlic and onion powder
1 whole garlic clove
Olive oil
Chili pepper
Chopped parsley
Chives
1 glass of white wine
Pine nuts
80 gr of chopped mixed olives
Bread crumbs
Grated Parmesan cheese
Salt and pepper
Method :
Clean the squid well.
Cut the squid heads into small pieces and cook them in a pan with olive oil, a clove of garlic, salt and chilli pepper.
Prepare the squid filling by mixing the cooked squid heads with the soaked and squeezed bread, cherry tomatoes, two tablespoons of ricotta, basil, garlic and onion powder, beaten egg, chopped parsley, in a bowl chives, parmesan, chopped olives, pine nuts, breadcrumbs.
Then fill the squid with the mixture, but not to the brim, because they could burst when cooked.
Close the stuffed squid with a toothpick.
Then brown the squid in a pan with a little olive oil, garlic and chilli pepper. Add some chopped parsley.
Then blend with the white wine and add the chopped tomato and basil.
Simmer for 10/15 minutes. Add the last spoonful of ricotta and stir gently.
Turn off the heat and let it sit for a few minutes.
Serve the squid warm with their sauce.
