The recipe for Sicilian stuffed trousers
In Sicily we call them cartocciate, or Sicilian, if fried, these delicious mini calzoni have a tasty filling made with spinach mozzarella and ham; mozzarella and ham mushrooms; with wrustels and cheese; with ham and mozzarella black olives and tomato; with onion black olives anchovy and tuma; with aubergines tomato and mozzarella….
Cooked in the oven or fried in a pan, these rustic Catanese are ideal for a party or a dinner with friends.
Being far from my Sicily and from the Catania bars, I learned to prepare the cartocciate and the calzones in a homely way.
Try to make these cartocciate of different tastes, perhaps getting help from your children. .

This is my recipe for cartocciate (calzoni) with eggplant filling ...
Ingredients:
For the bread dough:
1 kg of flour
500 ml of water
25 gr of yeast
2 teaspoons of sugar
5 spoons of olive oil
1 teaspoon salt
For the stuffing :
1 Sliced fried eggplant
2 boiled eggs
150 gr of cooked ham
250 gr of mozzarella
Tomato sauce to taste
Basil
Olive oil
Salt and pepper
Method :
Mix all the ingredients for the bread dough with the mixer until the dough detaches from the edges of the mixer.
Let the dough rise for about two hours covered with a cloth. Make small balls the size of a mandarin and flour them.
Then roll them out with a rolling pin and form circles.
Then stuff the cartocciate with a slice of fried aubergine, a ham, a little mozzarella, a little crumbled hard-boiled egg, a spoonful of tomato sauce and basil.
Close the trousers obtained by sealing the edges well.
Bake at 250 degrees for about 20-30 minutes or fry the cartocciate in boiling oil for a few minutes.
Serve the cartocciate lukewarm and ... buon appetito!
