Chiacchiere siciliane. Dolci di carnevale. Chiacchiere senza glutine.
Chattering is Sicilian fried sweets par excellence during the Carnival period.
My mother always prepared them and my brother and I ate them willingly. Here is my mom’s recipe.
Ps: for those who are intolerant to gluten below you can find the recipe:
Gluten free ingredients:
300 gr gluten-free flour
(for example: 200g Mix C and 100gr Biaglut for leavened dough)
60 grams of sugar + 60 grams of blended sugar.
2 large eggs
25 gr margarine
1 packet of gluten-free yeast
1/2 glass of Martini white or milk
Fry oil
Method :
Put all the ingredients in the planetary mixer, except the frying oil.
Let it mix well.
Wrap the dough in the transparent film and let it rest for 30-40 minutes in a cool, dry place.
Then work everything with your hands until you get a smooth and homogeneous mixture.
With a rolling pin (or the pasta machine) roll out a thin sheet of about 3 mm in height. Cut the dough into the shapes you prefer with a notched wheel (rectangles, squares, rhombuses, triangles and candies). Also make long, knotted strips.
In a high-sided pan, fry the chatter in hot oil. When they are golden brown, place them on absorbent paper and let them cool completely. Dust the chatter with the blended sugar and serve.

- 500 gr of 00 flour
- 2 whole eggs
- 70 grams of sugar
- 70 grams of butter at room temperature
- grated peel of a lemon
- 1 sachet of vanilla
- 1 packet of baking powder
- 2 tablespoons of marsala (cognac / rum) - 2 tablespoons of anise
- Half a glass of prosecco
- Salt to taste
- Fry oil
- Icing sugar
Instructions
Method :
Sift the flour and put all the ingredients in the planetary mixer, with the exception of the icing sugar and the frying oil.

Ps: you can also cook them in a preheated oven at 180 degrees for about 20 minutes after having brushed them with milk and beaten egg.
