Vegetable burgers
Ingredients:
4 medium boiled potatoes
50 gr of cooked peas
8 cherry tomatoes
1 boiled carrot
1 chopped onion
1 boiled courgette
1 egg
50 gr of breadcrumbs
50 gr of grated Parmesan
chopped parsley
flour to taste
olive oil
salt and pepper
Method:
Clean and cut all the vegetables into small pieces.
Boil them for 10 minutes and then remove all the cooking water.
In a large bowl mix all the vegetables by hand together with the other ingredients.
Form hamburgers with your hands.
Flour the vegetable hamburgers and cook in a pan with a little olive oil.
Serve immediately.
