Risotto with porcini mushrooms
Ingredients:
500 gr of rice for risotto
1 kg of porcini mushrooms
1 onion
1 clove of garlic
half a glass of dry white wine
vegetable broth
50 gr of Butter
100 gr of grated Parmiggiano
Chopped parsley
Olive oil
Salt and pepper.
Method:
Sauté the mushrooms with garlic and oil for a few minutes and set aside.
Stir the rice with oil and chopped onion.
Deglaze with white wine and allow to evaporate.
Add the vegetable broth to the rice a little at a time and mix it.
Add the sautéed mushrooms, a pinch of salt and pepper.
After cooking, turn off the heat.
Add the butter, parmesan and chopped parsley.
Stir everything and serve immediately.
