RISOTTO WITH GREEN ASPARAGUS PESTO
Ingredients for 4 people :
400 gr of rice
Asparagus broth
1 chopped onion
Half a glass of dry white wine
Green asparagus tips
1 cup of green asparagus pesto
1 large slice of chopped mortadella
150 gr of grated Parmesan
Chopped parsley
Olive oil to taste
Butter nut
Salt and pepper
Method :
Prepare the base for the risotto by browning the chopped onion with olive oil. Add the rice and toast it.
Add the white wine.
Add the asparagus cooking broth and cook for about 20 minutes.
Then add the asparagus pesto, the tips, the chopped mortadella, the grated parmesan, the nut of butter and stir.
Decorate with a little chopped parsley and serve.
