Bucatini with sardines
Ingredients:
400 gr of bucatini
150 gr of sardines
180 gr of wild fennel
saffron
chopped almonds
100 gr of breadcrumbs
2 anchovies in oil
30 gr of pine nuts
1 onion
fresh parsley
olive oil
salt and pepper
lemon zest
Method:
Clean the fresh sardines.
Make a sauce with anchovies and onion oil. Cook for 10 minutes on low heat.
Dissolve the saffron in the water and add it to the sauté.
Also add the sardines, pine nuts and almonds; cook for 10 minutes.
Cook the fennel in boiling water and keep the cooking water.
Chop the fennel and add it to the sauté. Season for 5 minutes.
Toast the breadcrumbs in a pan.
Cook the pasta in the water where you have cooked the fennel.
Drain the pasta and stir in the sautéed fennel and sardines.
Add the breadcrumbs, the chopped parsley and the lemon zest and serve immediately.
