For us Italians it is not Christmas without the pandoro.
Today I present my homemade limoncello pandoro.

If you have some time and a little patience, you will have created a delicious homemade pandoro.
In fact, the preparation time is 5 hours of leavening, plus 1 hour of cooking, plus the time of cooling and filling. The ideal would be to prepare it the day before and then enjoy it slowly.
You need a pandoro-shaped pan, or a high star-shaped pan.

Pandoro Ingredients:
250 gr of 00 flour
15 gr of baking powder
120 gr of butter
4 eggs
2 yolks
250 gr of whole milk
100 gr of sugar
1 orange
2 tablespoons of limoncello
20 gr of honey
1 teaspoon of vanilla essence
a pinch of salt
icing sugar
Method :
Beat the egg whites until stiff and melt the butter in a water bath, putting both aside. Heat the milk with honey.
Pour the sifted flour, the grated orange peel, a pinch of salt, the sugar and the baking powder into a bowl and mix to mix.
Add the warm milk with honey, vanilla essence, limoncello, melted butter, egg yolks and whipped whites without stopping to mix to avoid the formation of lumps.
Knead well so that a compact and lump-free mixture is formed then cover with a slightly damp cloth and leave to rise for 2 hours in a warm place.
After 2 hours, take the dough and work it by adding a little flour then pour it into a greased and floured pandoro mold up to half of the mold itself.
Leave to rise for another 3 hours in a warm place without covering it.
Heat the oven to 180 ° and bake for 1 hour at 160 ° if using a fan oven or for 50 minutes at 170 ° if using a classic oven.
Never open the oven before the cooking time has elapsed !!
Check with a toothpick and if it comes out dry it means that the pandoro is ready.
Then let the pandoro cool, remove it from the mold and sprinkle it with icing sugar.
Once completely cooled, you can fill the pandoro with limoncello cream and put it in a transparent plastic bag to prevent the air from drying it.
