This rice salad is truly delicious, without pickles and mayonnaise.

Ingredients:
400 gr of rice
Cherry tomatoes
mozzarella cheese
a large slice of mortadella
green or red melon
Roasted peppers
Green olives
Basil and mint
A little rocket
Olive oil
Half a lemon
salt and pepper
A variant is with the following ingredients:
400 gr of rice

Grilled courgettes
Sliced smoked salmon (or canned tuna)
Red melon and yellow melon

Method:
Let the boiled rice cool down previously.
Marinate all the ingredients cut into small pieces and add them to the rice. Keep in the fridge for at least half an hour.
